AMARETTO BISCOTTI

Final Result after Combining Seven of my Mother's Recipes

3 C flour

1 t baking powder

1/4 t baking soda

1/2 t salt

10 T butter (softened)

1 1/4 C sugar

2 eggs

1/2 C pistacchi (roasted, salted, not chopped)

1/2 C white chocolate chips

1/2 C dried cranberries

3 T amaretto (or brandy)

1 T vanilla

In medium bowl, combine flour, baking powder, baking soda, salt. In larger bowl, mix butter for 30 seconds. Slowly add sugar. Add eggs, vanilla, amaretto. Next, slowly beat in flour, a scoop at a time. Mixture will be dense.

With spatula, add cranberries, nuts, chips. Turn it out on a lightly floured surface. Divide into 3 parts and form into 3 loaves about 10" x 3" x 1/2". Put on sheets. Put in refrigerator for 15 minutes.

Preheat oven to 350. Bake 20-30 minutes until loaves are very light golden in color. (Start checking at 20-minute mark.) Let cool 45 minutes. Heat oven to 325. Cut cookies on diagonal, 1/2" wide, put each piece on its side, bake 5-7 minutes. Take out and turn on the other side. Bake 4-5 minutes.

Don't be afraid! I'm not a baker—at all—and I can make these. The hardest part is knowing when to take them out of the oven each time. It will depend on your oven. The first round is the trickiest. You may not think they're golden enough, but if you leave them in too long, they end up too hard. They also may not seem firm enough, but they firm up during those 45 minutes. I've found 25 minutes to be the sweet spot in my oven. I typically leave them in 6 minutes for the second round and 4 minutes for the third.

Even if you over or under bake, they will still be delicious—as long as you don't skimp on the liqueur.

I use pistacchi but have used pecans and walnuts. If I use the latter two, I do chop them slightly
